I didn’t have many pregnancy cravings, but the one I did have persevered throughout the entire 9 month stretch of sobriety: a margarita. I dreamed of a refreshing, juicy, iced margarita almost daily once 5PM rolled around. So now that I’m newly unpregnant and we’re in the heavy days of a heat wave, I’ve been going crazy in the kitchen coming up with refreshing margarita recipes. Here’s my cucumber lime margarita that I must say is simply delightful, especially on a humid summer evening.
INGREDIENTS:
Tequila (to taste…to tipsy level preferences – or to stress levels)
2 Cucumbers (long ones are best to create the spiral)
3 Limes
Simple Syrup
Ice
Tools: You’ll need a blender, veggie peeler, and a strainer.
INSTRUCTIONS:
Peel ONE cucumber, chop, and blend. Add a tablespoon of water to help with a smoother blend.
Once blended well, pour into a strainer over a large glass or pitcher to separate the juice.
Add the juice of 2 limes (use the last lime for garnish!)
Add 2 tablespoons of simple syrup.
Pour in your tequila (this recipe makes two drinks, so 2-4 shots is what you’re looking at) and stir.
Cut 2 long strips from your other cucumber (this might take a couple tries…don’t make them too thin). Once you have 2 good cucumber strips, spiral them into a clear glass.
Pile ice high into your glasses to secure the cucumber strip spiral.
Pour drink mixture into your glasses, garnish with lime wedges and add a straw if desired.
